Gel food colouring pastes are suitable for colouring any type of icings such as sugar paste, royal icing, buttercream or even cake mixes, and due to their thicker consistency, food colouring pastes and gels do not alter the viscosity of cake batter and icing when used. Additionally, due to their high concentration, the colours can be used sparingly to achieve a pastel shade, and more liberally to give a strong, vibrant colour.
